How’s your sugar-free diet going? Mine was suffering immensely, until a friend sent me this recipe. I tweaked it a little and it turned out to be absolutely amazing. I have grown up making real sugar-full flour-full banana bread and didn’t want to ruin my experience with something different. However, if you are up for a slight change in texture and whole lot of protein-packed flavour, this sugar-free banana bread is for you!
Suggestions:
- If you are not strictly sugar free, add a little honey or dried fruit.
- If you are not strictly alcohol-free, throw in an ounce of brandy, whisky or spiced rum. I am Goan, so finding ways to incorporate liquor is not difficult. Plus it adds flavour, softens the texture and keeps the loaf moist.
- If you get tired of this banana bread flavour, add cocoa powder or pour it into a muffin tray to make muffins!

Ingredients:
- 4 ripe peeled bananas
- 4 large eggs
- 1/2 cup almond butter
- 1/4 cup softened butter
- 1/2 cup coconut or rice flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- pinch of salt
- cinnamon, nutmeg, honey, liquor, dried fruits – whatever optional toppings you would like.
Instructions:
- Blend bananas, eggs, almond butter and regular butter in blender.
- Mix in flour, baking soda, baking powder and salt. Pulse blender to mix evenly.
- Throw in optional toppings and pour into lightly greased oven-safe dish. Leave about 1/2 to 3/4 of an inch from the surface as the loaf will rise. If baking in a small oven, cover the top with foil to prevent burning the top if the loaf rises close to the element.
- Bake at 350F for 60 minutes. Let it cool completely before cutting slices, otherwise it will still appear uncooked.
