I can assure you, they taste as delicious as they look.
Coconut and almond are great sources of healthy fats that keep us full and give us great energy during the day. Throw in some apricots for sweetness and you’ve got a fantastic snack to get you through your workday.
ingredients
1.5 cups raw almonds
2 cups dried dates
1/2 cup dried apricots
1/4 cup ground flaxseed
1/2 cup shredded coconut
1 scoop of preferred protein powder
1/4 cup water
Mix all into food processor or powerful blender. Pulse until almonds and dates are mostly chopped and a sticky paste begins to form.
Note: do not over-blend. Mixture will become tough and tasteless!
Form into balls or pat into a parchment lined tray and cut into bars. I store mine in an air-tight container in the cupboard.
Bring to work, snack before the gym or keep in the fridge for a tasty summer treat. I’m assuming they go bad if not consumed, but mine have never lasted long enough to find out!
